With school starting on Monday across the county, a common question crossing the minds of many as they prepare to pack lunch for their kids. Should I make ham and cheese or peanut butter and jelly sandwiches?

How about neither? Get your kids pumped for the school year with a lunchbox makeover.

Chicken Pita Sandwiches

1 cup cooked chicken or turkey, shredded

1 medium-size pita (about 6" across)

2 tablespoons mayonnaise

1 tablespoon mustard

2 leaves lettuce (red leaf, romaine, etc.)

1/2 tomato, in slices (optional)

Cut the pita in half to make two pockets. Spread the mayonnaise and mustard equally between the two halves' insides. Stuff the chicken into the pockets, then add the lettuce. Keep the tomato in a separate baggy so the bread won't get soggy. Wrap sandwich in plastic wrap or foil.

Waffle Apple-Wich

2 frozen waffles, toasted, cooled

1 slice American cheese

6 slices deli sliced smoked ham

1/2 small apple, sliced and tossed with a little lemon juice

2 tsp. maple-flavored or pancake syrup

Top 1 waffle with cheese, ham and apple slices. Cover with second waffle. Wrap sandwich in plastic wrap or foil. Pour syrup into sealable plastic container.

2 whole-wheat hero rolls

Mustard

Mayonnaise

4 ounces thinly sliced turkey

4 ounces thinly sliced baked ham

4 ounces sliced Swiss cheese

1/2 cup sliced bread-and-butter pickles

1/2 head butterhead lettuce, or lettuce of your choice

Split rolls in half horizontally. Spread the bottom half of each with mustard and the top half with mayonnaise. Layer turkey, ham, and cheese on bottom halves of rolls; top with pickles and lettuce. Return tops of rolls. Wrap sandwich in plastic wrap or foil.

Pickler Sandwich

For the Sandwiches

4 top-split hot dog rolls, or small hero rolls

1/2 cup sliced bread-and-butter pickles

1/2 head butterhead lettuce, or lettuce of your choice

·For Egg Salad: (Makes 2 cups)

6 hard-cooked eggs, peeled and coarsely chopped

1/4 cup mayonnaise

2 teaspoons Dijon mustard

2 tablespoons sweet relish, drained

Coarse salt and freshly ground pepper

Stir together eggs, mayonnaise, mustard, relish, salt, and pepper in a medium bowl. If not using egg salad immediately, it can be refrigerated, covered, up to 1 day.

Open rolls, or split lengthwise. Fill with egg salad; top with pickles and lettuce. Wrap sandwich in plastic wrap or foil.

Be-My-BBQ Beef

6 slices deli sliced roast beef , cut into strips

1 tablespoon honey barbecue sauce

1 hamburger bun

1 lettuce leaf

1 slice American cheese

Toss the meat with barbecue sauce. Fill the bun with lettuce, meat and 2% Milk Singles. Wrap sandwich in plastic wrap or foil.
