Jeff Tucker, owner of the former Weakley-Watson Sporting Goods building on Fisk Street, has revealed more of his plans for the historic building: creation of a 400-seat indoor-outdoor venue that includes a microbrewery and restaurant.

The building is currently unoccupied, but Tucker is renovating the 1880s-era rock building and will demolish the portion that was added on in the 1940s. He hopes to be able to open the establishment he is creating in March.

“This isn’t a bar,” Tucker said. “It’s going to be a family restaurant. We want this to just be a really cool family spot.”

Tucker also said he is talking with someone who is interested in operating an artisan bakery in the building. “It really fits in good with what we’re doing,” he said.

The establishment will be “definitely different from anything downtown,” Tucker said. “It’s something unique. It’s something different.”

He described the establishment as a place “to come get a good meal, a meal and a beer, just come relax or have an event.”

Tucker said the microbrewery will be a taphouse where customers can “peruse and sample,” and wine will also be available. “There is going to be our own label microbrews and our own label wine, and some outside beer and wine as well,” Tucker said. “And then we’ll have an outdoor beer garden that will be an area just to have food and relax, and an indoor space as well.”

Tucker said the microbrewery will produce at least five craft  beers: stout, lager, red and  blonde, and the fifth beer will be “brewer’s choice. We might make something exotic.

“And on the wine end, we’re going to create a label as well, and we’ll have a couple of reds and whites. If somebody wanted something from Napa Valley, we could create that as well.”

The restaurant portion of the establishment will have “very good quality food items, and there are going to be specialty items as well,” Tucker said. “Our menu’s not going to be a huge menu. It’s going to be very simple but very quality-driven.”

Offerings will include fire oven gourmet pizzas and meat that includes steak bites and bratwurst, Tucker said. There will also be meat and cheese trays and salads.

“We just want to make a very simple, good quality fare out here to pair with the wines and the microbrewery,” Tucker said. 

He said the kitchen “will actually be disguised as an old orchard truck — a food truck, essentially. It’s going to be adjacent to the outdoor area. It’s covered, but it will be outside. It’ll be like a 1938-style orchard truck, but it’s going to be essentially a kitchen and an oven.”

That’s where customers will go to place and pick up their orders, Tucker said. He said there will be a waitstaff to assist customers.

Tucker said he has been working with the City of Brownwood and “talking about beautification and lighting. We want to create a very good aesthetic of historic lighting and greenery, and trees and crepe myrtle, and things like that.”

Tucker said he anticipates opening with seven to 10 full-time employees and perhaps five part-time workers.

In an earlier interview, Tucker said a “full renovation” of the original 1880s-portion of the building will take it “back to what the original building used to look like.” He said the renovation will include new light fixtures, new floors and the opening up of now-closed archways.

A former Fort Worth firefighter, Tucker lives on a ranch near May with his family. He has a global Cross Fit gymnastics business and appeared last year on the Discovery Channel’s survival series “Darkness.”

Tucker said he is from Palo Pinto County, and his wife, Tracy, is from Canyon. The family has been in Brown County for about 6 1/2 years.
